Only a small portion of AEC 309 students voted on my challenge option, but I still went with the vote - which is the $2/day for 3 days option. I thought about different times to start, and decided to do it starting at 5 pm today - Sunday.
I've done the "challenge" every year that I've taught AEC 309 - about six now. And it never gets easy and always adds some item of interest, I always learn something.
I always tend toward the beans and rice diet - seems like a good way to get enough bulk to keep me from getting too hungry and grouchy. I think there is also a decent amount of nutrition - well, maybe protein. Take a look at Will's link to "how the world eats" - this is my version.

Here's the budget: 3 eggs - ($1.99/dz) -- $.50 (1/day for breakfast)
3/4 lb. of black beans .94 (they are cooking now)
rice - 2 lbs. 1.50 (breakfast and dinner)
peanut butter (1/2 jar) .94 ( I drew a line half way)
bread .89 (what a score! manager's special)
tomato sauce .37 (the cheapest thing in the store!)
tea $.02/bag .12 (2/day - gotta replace the coffee)

OK, beans are about ready. Time for dinner of rice and beans. An egg and rice for breakfast. Two pb sandwiches for lunch.
